National School Breakfast Week Celebration Kick Off

Happy March everyone!  This is our best month of the year with so much focus on healthy eating.

But let's start with this week's kick-off, National School Breakfast Week.

This time always reminds me of my time as a child going to school and as a mom caring for my two children.

When I was a child, my mom, a single working mother, was often gone by the time my sister and I got up for school.  But despite her early departure, there was always a breakfast waiting for us in the kitchen.

Sometimes, it was ham already browned and the eggs whipped, requiring us to just put it in the pan for some scrambled eggs and ham.  Other times, there was a pot of freshly made oatmeal or malt-o-meal.  But there was always a set table and our breakfast ready.

I think how she must have gotten up early to leave us this ready to ensure that we had our breakfast before going to school.  I know how much she loved us not only by her words and affection but by how hard she worked to ensure that we had a healthy balanced meal.

School was important and she would always say, "a flower can't grow properly without the proper nourishment."  

As we begin our national school breakfast week, I send my deepest thanks and appreciation to my mom for ensuring that I was always well nourished before breakfast.
