This month is National Potato Lover's Month.
Many people think potato and immediately think of French fries, loaded baked potato and potato chips. And you might also associate fatty and unhealthy too. But actually potatoes have gotten a bad rap about their health benefits because of these 2 foods and how they are cooked.
Actually, if you took any vegetable and deep fried it, you would be killing nutrients and adding fat to it. Or if you took any vegetable and loaded it with butter, cheese, sour cream and bacon bits you would be adding a ton of calories! So really, it is more about you cook the potato (or any vegetable) and what you add to it that will greatly determine the calories, fat and health benefits.
Kids love potatoes and they are a worthy vegetable filled with lots of nutrition. I am not saying, kids don't need green leafy or orange vegetables but kids need several servings of a variety of vegetables and potatoes can be one of their servings of vegetables.
