This recipe gives you the feeling and taste of the smoky grill but leaves the fish moist and delicious and packed with flavor. Fish can also be baked, if you don’t have a grill.
Ingredients
Catfish filets 4 (about 2 lbs)
Olive oil 2 tablespoons
Lemon juice 1/4 cup
Parsley 1 teaspoon
Dill weed 1 teaspoon
Salt 1 teaspoon
Pepper 1/2 teaspoon
Paprika 1 teaspoon
Onion, thinly sliced 1 medium
Directions
Together: Add 1 tsp. salt
Together: Spray 4 squares of heavy-duty foil with non-fat cooking spray; place equal amounts of fish on each square.
Kids: Sprinkle with paprika, top with onion slices.
Adults: In a small saucepan combine olive oil, lemon juice, parsley, dill weed, salt and pepper. Pour equal amounts over fish.
Together: Wrap foil securely around fish, leaving space for fish to expand.
Adults: Grill 5-7 minutes on each side or until fish flakes when tested with fork. (You can also bake the fish at 400 degrees for 15-20 minutes.)
