Kids: Form little islands by scooping out the meringue from the meringue mixture.
Together: Whip egg whites at medium speed with electric mixer. When they start to firm up add the sugar and whip until soft peaks form.
Add enough milk to a 12-inch pan to fill with approximately 1 inch of liquid.
Adults: Poach in the simmering milk for eight minutes at medium heat, flipping over halfway through the cooking time.
Adults: When the islands are finished cooking, remove with a slotted spoon and place on a cookie sheet set on top of a cooling rack.
Adults: * If you don’t have superfine sugar, process regular sugar in your food processor for 30-40 seconds
6 ounces of egg whites is approximately 6-8 eggs
