Pumpkin Pancakes

Kids love to cook and eat pancakes, so why not give the classic dish a seasonal (and nutritious!) twist with some pureed pumpkin? Simply substitute canned pumpkin if you don’t have a fresh one available.

  • 1 cup sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 cups milk
  • 2 eggs
  • 1 tbs. vanilla extract
  • 1 cup pumpkin puree
  • 3/4 tsp. cinnamon*
  • 1/2 tsp. ground ginger*
  • 1/4 tsp. ground cloves*
  • 2 tsp. pumpkin pie spice*

Directions

Together: Mix together all your ingredients (be careful not to overmix)
Adults: Pre-heat griddle or large pan.
Adults: Add a little butter to the griddle and then pour your batter on.
Together: Flip pancakes once they begin to bubble in the middle.
Kids: Top pancakes with butter and syrup, if desired.
