A meatless, delicious dinner to make for your family
Ingredients
Olive oil 1 tablespoon
Garlic, minced 2 cloves
Ripe or canned tomatoes, chopped 4 cups
Dried basil leaves, crushed 1 teaspoon
Dried oregano leaves, crushed 1 teaspoon
Ground red pepper or cayenne, to taste
Cooked corkscrew pasta 4 cups
White beans, drained 1 8-ounce canned
Fresh parsley, minced Pepper, to taste 1/4 cup
Directions
Adults: Heat oil in medium saucepan; sauté garlic and parsley until golden.
Adults: Chop tomatoes then add with spices. Cook uncovered over low heat for 15 minutes or until thickened, stirring frequently.
Adults: Add white beans and cook just until beans are heated through. Remove from heat and cover until pasta is ready.
Adults: Cook pasta in unsalted water until firm.
Together: To serve, spoon sauce over pasta and sprinkle with coarsely chopped parsley and black pepper.
Adults: Serve hot as a main dish and cold for next day's lunch.
*Ground red pepper or cayenne can be used. Add to taste
