Veggie Dip

 
A healthy tasty dip to serve during a party for everyone to enjoy.
 

Ingredients

 
  • Olive oil 1 teaspoon
  • Onions, finely chopped 1/3 cup
  • Red or green bell peppers, finely chopped 1/3 cup
  • Celery, finely chopped 1/3 cup
  • Zucchini, finely chopped 1/3 cup
  • Tomatoes, finely chopped 1/3 cup
  • Finely peeled and chopped eggplant 1/3 cup
  • Chopped fresh basil (or ¼ teaspoon dried) 1 teaspoon
  • Salt and pepper to taste
  • Red wine vinegar 1 teaspoon
  • Sugar ¼ teaspoon
 

Directions

 
Adults: Heat the oil in a skillet over medium heat. Add the onions and peppers and cook for about 3 minutes.
Adults: Finely chop bell pepper, celery, zucchini, tomato, and eggplant. Add the zucchini, celery and eggplant. Cook 3 minutes more
Together: Add the tomatoes, basil, salt and pepper. Simmer for 20 minutes, uncovered. Let cool.
Kids: Add the vinegar and sugar. Flavor with salt and pepper.
Kids: Serve cold as a dip with crackers or chopped vegetables.
Adults: Did you know? You should get a minimum of 5 servings of fruits and vegetables every day. Try eating a combination of colored fruits and vegetables. Don’t forget they can be fresh, frozen, dried, or canned!
