Greek Salad Pitza

 
A delicious salad that can be served during dinner time for everyone to enjoy.
 

Ingredients

 
  • Salt 3/4 teaspoon
  • Oregano 1 teaspoon
  • Red pepper flakes 1 pinch/dash
  • Pepper 1 pinch/dash
  • Whole Wheat Pita, 6 inch 2 each
  • Lemon 1/2 each
  • Feta Cheese 3/4 cup
  • Romaine, Heart 1 each
  • Red Onion 1/3 each
  • Olives, pitted 1/4 cup
  • Mint 2 tablespoons
  • Red Wine Vinegar 1 tablespoon
  • Plum Tomatoes 4 each
  • Extra Virgin Olive Oil 3 tablespoons
 

Directions

 
Adults: Preheat the broiler.
Kids: Line a baking sheet with foil.
Kids: In a large bowl combine the lettuce, onion, olives, mint, red wine vinegar, oil, 1/2 teaspoon salt and pepper flakes. Toss to coat evenly.
Together: Place the pita halves on the baking sheet. Top the pitas with the crumbled feta, and top with the tomatoes, oregano, 1/4 teaspoon of salt and freshly ground pepper.
Adults: Place under the broiler and cook until the cheese is bubbling, about 2 to 3 minutes, taking care not to burn.
Together: Place the pitas on serving plates and divide the salad mixture evenly among them.
Kids: Top with a squeeze of lemon, and serve immediately. *Thinly slice Romaine and red onion.
