Pumpkin Spice Cookies

 
Make this "Cook Yourself Thin" recipe.
 

Ingredients

 
  • 2/3 cup plus 3 tablespoons sugar, divided
  • 1/4 cup butter, softened
  • 1/4 cup molasses
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons pumpkin pie spice
  • Cooking spray
 

Directions

 
Kids: Beat 2/3 cup sugar and butter with a standing or handheld mixer at medium speed until well blended.
Kids: Add molasses and egg, and beat well.
Kids: In a small bowl combine flour, baking soda, salt and pumpkin pie spice.
Kids: On Low speed gradually add flour mixture to sugar mixture. Mix until well blended.
Kids: Divide dough in half. Wrap each portion in plastic wrap and freeze for 30 minutes.
Adults: Preheat oven to 350 degrees.
Together: Shape each portion of dough into 35 (1-inch) balls. Roll in 3 tablespoons sugar.
Kids: Place, 2 inches apart, on baking sheets coated with cooking spray.
Adults: Bake for 12 minutes or until lightly browned. Transfer to cooling rack.
Adults: *Recipe makes 35 cookies. One serving is two cookies
